David Gelb’s documentaries, including “Jiro Dreams of Sushi” and “Wolfgang,” address figures who are legends in their fields and, rightly or wrongly, strongly linked with their “brands.” Gelb’s latest, the Disney+ documentary “Stan Lee,” continues that theme.
