For nearly sixty years, Victor Hazan was married to cookbook author Marcella Hazan, who is credited with bringing Italian cuisine to mainstream America. Last month, Good Food host Evan Kleiman interviewed Victor on the 30th anniversary of “Essentials of Classic Italian Cooking.” In an outtake from that conversation, Victor shares a story of Marcella procuring a human head during World War II.
