Nik Sharma believes even the turkey gets better the next day. Using turkey the same way he would use pork or chicken, he makes a vindaloo. The main flavor components are chilis, vinegar, and a bit of brown sugar. He incorporates leftover vegetables like Brussels sprouts into pupusas or parathas.
