His unique touch is the addition of cheese on top of the rolls. He serves them family style at his restaurant Public Kitchen & Bar at the Roosevelt Hotel in Hollywood. Parker House Rolls
Ingredients:
5oz…… Fresh yeast
2 cups warm water
3 cups warm milk
1 3/4 cups sugar
8 eggs
1 1/2 lbs. Soft butter
18 cups all purpose flour
3 tbs. Salt.
Warm milk and water – add yeast and sugar and dissolve.
Place in mixer; add eggs and butter and mix for 1 minute.
Add flour and salt and mix for 14 minutes
Ret dough rise in a warm area until it doubles in size.
Punch dough
Scale out 1.5 ounce pieces and roll into balls.
Place balls into a buttered baking dish, as many fit next to each other.
Let dough rise, doubling is size
Egg-wash the dough, sprinkle with Fleur de Sel
Bake in 350 degree oven for 12 minutes
Top with cheese and bake for an additional 6 minutes.
