Monica Ford is the market coordinator for Fairview Gardens. This week she's selling fennel root at the market. When the fennel bulbs are very small the fennel roots are tender and taste quite similar to carrots. She suggests roasting the bulb and root whole with olive oil and salt at 425° for 15 minutes. She also says you can juice the green tops.
Dan Mattern is the chef and co-owner of Cooks County on Beverly Boulevard. Right now he's using turnips in a variety of preparations. In one dish he's pairing lightly sautéed turnips with kumquats and duck.
